Guys, if you are wondering how to make ice pops at home, read on! The process is so simple and the final result is so worth it.

Making raspberry mint ice pops can be a great project for kids too. They are quick to make and no special tools are needed.

You can use ice pop sleeves or popsicle molds to pour the raspberry liquid in but if you don’t have any of those, use empty yogurt containers instead.

How to make raspberry mint ice pops

Pour water, honey and half of the mint leaves into a small sauce pan. Simmer for a few minutes (3-4). Now remove the sauce pan from the heat and set aside.

Second step is pureeing the raspberries and the rest of the mint in a food processor. Run this mixture through a fine mesh sieve or any sieve that will hold the tiny raspberry seeds.

You can also use a cheese cloth. I don’t recommend skipping this step. The raspberry mint ice pops taste way better without them! Trust me.

Now all you have to do is remove the mint leaves from the honey water and add the raspberry mixture in. Mix, pour in popsicle molds and freeze.

Useful tips when making raspberry mint ice pops

  • These pops will need at least 7 hours in the freezer.
  • If you don’t have a popsicle mold with a lid, you will need to wait until they will set enough to hold the sticks. I usually wait 2 hours before inserting them.
  • Use bottled water or filtered water to achieve the best flavor.
  • You might need to increase/decrease the amount of honey depending on the sweetness of your raspberries or your personal preference. Also for more sour-y taste, more lemon juice can be easily added.
  • The more raspberries you use the more intense flavor. I don’t recommend using less than stated in the recipe.

  • In a small sauce pan, combine the honey, water and 5 mint leaves. Heat this up (do not boil) until the honey is melted and set aside.

  • Puree the raspberries and the rest of the mint leaves in a food processor. Run the mixture through a sieve to remove all the seeds.

  • Remove the mint leaves from honey water and add in the pureed raspberries. Squeeze the lemon in and give it a good mix before pouring into popsicle molds or ice pop sleeves.

  • Freeze for at least 7 hours (best overnight).

Notes

  1. I highly recommend using filtered or bottled water to make these.
  2. Mint can be omitted completely.
  3. The amount of popsicles you will get depends on the size of your mold. Mine holds 6 x 2 ounces (60 ml).
  4. If you don’t have popsicle mold with a lid, insert the sticks 2 hours into freezing or when the pops are firm enough to hold them but still soft enough to go through the ice.
