And what I really love about this keto chicken soup is that it has all the elements of regular chicken noodle soup – soft noodles, shredded chicken, tasty broth, and tons of nutritious vegetables - but not all the carbs.

INGREDIENTS YOU'LL NEED FOR KETO CHICKEN NOODLE SOUP

While the ingredients list might seem a little overwhelming, everything on this list is actually super easy to find.

Andmost of them are pantry staplesand really inexpensive too.

Here's what you'll need:

CAN YOU HAVE NOODLES ON KETO?

So, classic chicken noodle souptypically uses egg noodles, which are just straight-up carbs and obviously not keto-friendly.

To keep this chicken noodle soup low carb, the first thing you might think you need to do is skip the noodles completely. But that defeats the purpose of chickennoodlesoup.

So, to make this chicken noodle soup keto - while still keeping it as authentic as possible - we'll be using shirataki fettuccine noodles.

If you haven't heard of shirataki noodles before, they're literally "miracle noodles."

For one, they're extremelylow carbatless than 1 g NET CARBS per 100g of noodles.Plus, they are totally filling and have the perfect noodle texture for soup!

ARE CARROTS KETO?

Now, a staple ingredient used in chicken noodle soup is carrots.

And you may be wondering,are carrots keto?

Well, the answer is that carrots are keto friendly if you eat them in moderation. If you consume a small amount, like there are in every serving of this keto chicken noodle soup recipe, you can eat them and stay in ketosis.

However, if you eat carrots in large quantities, it could definitely kick you out of ketosis.

So just keep in mind that carrots are a keto-friendly vegetable as long as you eat them in small amounts.

HOW TO MAKE KETO CHICKEN NOODLE SOUP

Ok, now that we've talked about the ingredients, let's get into the instructions for the recipe.

As I mentioned earlier, the whole thing takes less than an hour to make,andyields 12 cupsof hearty and wholesome low carb chicken soup.

And this soup recipe is also pretty much a one-pot meal, which means a lot of good food with not a lot of clean up - a total win-win!

Anyways, let's get down to it.

STEP 1A: PREPPING THE CHICKEN

To make the cooking process go a lot smoother, we'll be prepping our chicken, all the veggies, and noodles beforehand, and then separating them into a few bowls, so everything is in place once it's time to cook.

That said, the first thing you'll want to do is prepare the chicken.

And, as I've already said, you can use either a prepared rotisserie chicken for the soup, or you can boil/shred the chicken yourself.

Now, if you're using rotisserie chicken, you'll want to start by removing the skin from the breasts.

Then, you'll want to remove the breasts from the rest of the chicken, and add them to a medium-sized bowl. Now, once you've done that, it's as easy as shredding the chicken with two forks, or you can use a hand-mixer to make the shredding process even easier.

That said, once you've got the chicken shredded, you can set it aside, and start working on the rest of the ingredients.

STEP 1B: PREPPING THE VEGGIES AND NOODLES

Next, we'll work on theveggies.

For thecarrots, you'll want to peel off the rough outer layer, and thenchop them into ¼ inch thick circles.

Then, you'll want to cut off the tops and ends of the celery and chop them intou-shaped pieces, about ½ inch thick.

Next, you can remove the skins of the onions, chop off the ends, and dicethem intosmall pieces.

So, once that's taken care of, you can add all of them to a large bowl, and set it aside.

Now, you'll want to prepare the garlic - peel off the papery skins (you can crush the garlic with the flat side of your knife to make this easier),mince, and then add it to a small bowl.

How To Prepare The Keto Noodles

Last but not least, you'll want to prep the ketonoodles.

So, you'll want to strainthe shirataki noodles in a sieve and wash them under hot water.

And some shirataki noodles tend to have a noticeable flavor, so you'll want to add about ½ tablespoon of saltwhile straining and washing the noodles to help neutralize the taste.

STEP 2: SAUTÉ

So if you followed everything in the first step, all the ingredients should beready and in place, making this next steps an absolute breeze.

That said, you'll want to start this step by heating your olive oil in a large stockpot over medium-high heat.

Then, add thecarrots, celery, and onionsto the pot and cook them until softened – about8 to 10 minutes– stirring every now and then to make sure they don't burn.

Next, you'll want to add the minced garlic,andsautéfor about2-3 minutesor until fragrant.

STEP 3: BOIL

Now, once the garlic is fragrant, pour in the chicken broth,followed by thenoodles, bay leaves, oregano, thyme,andblack pepper.

Bring the soup to a boil,andthen let it boil for about5 minutes– or until the vegetables arefork-tender.

Then, add in the shredded chicken, continue boiling the soup for about 2-3 minutes, just to warm it up.

Now, add salt and pepper to taste, and you can also add any additional seasonings you might want as well, such as chili flakes.

Lastly, take out the bay leaves,serve hot, and enjoy!

STORING YOUR KETO CHICKEN NOODLE SOUP

Chicken soup isexcellent to have on-hand for when it's cold outside, for when you're not feeling well, or for when you're in the mood for something healthy and delicious.

Luckily, this recipe makes 12 servings. So, you'll definitely have some leftover to keep on hand when you want it.

That said, you can store this keto chicken noodles soup in an airtight container in the refrigerator for 5 to 7 days. And since it lasts so long in the fridge, it also makes for anideal meal-prep dish.

Now, if you would like to store your soup for longer, you can keep it in thefreezer for up to 6 months. Just make sure to freeze it in either airtight containers or freezer-safe gallon bags.

Reheating this keto soup

So, when you are ready to reheat your soup, you can thaw it in the fridge - this will take 1-2 days.Or, if you want to speed up the thawing process, you can put the soup in a warm bowl of water until it partially defrosts.

Then, once it does defrost, you can put it into a large saucepan over low/medium heat until the soup thaws out completely.

Now, after the soup has thawed out, place it in a saucepan, and heat over medium-high heat until it reaches your desired temperature.

And if the soup is lacking liquid, add in half a cup of water until it reaches the amount of liquid you prefer.

By the way, if you would like to heat your soup in the microwave, do it in 30-second intervals, stirring each time, until it reaches your desired temperature.

Ingredients

2 Tablespoons (28g) olive oil

1 Cup (125g) carrots (about 3 medium carrots)

1 Cup (100g) celery (around 2 stalks)

⅔ Cup (150g) yellow onion (1 medium or 2 small)

2 (5g) Garlic cloves

64 oz. (19L) chicken broth

2 Bay leaves

1 Teaspoon dried thyme

½ Teaspoon dried oregano

16 oz. (552g) Shirataki fettuccine noodles

2 (375g) Cups shredded chicken

Salt and pepper to taste

Instructions

  1. De-skin the rotisserie chicken, add the white meat to a large bowl, and thoroughly shred the meat with two forks - or a hand mixer. Alternatively, you can make shredded chicken from scratch.
  2. Once the chicken is shredded, peel the carrots, and cut them into ¼ inch thick circles.
  3. Then, trim the tops and ends off of the celery, and cut them into ½ inch thick u shaped pieces.
  4. Remove the skins from the onions, cut off the ends, and dice them into small pieces.
  5. Add all of those veggies to a large bowl, and set them aside.
  6. Next, remove the skin from the garlic, mince it, add it to a small bowl, and set it aside.
  7. Now, strain the noodles in a sieve, and wash them under hot water. By the way, you'll want to add a little salt - around ½ a tablespoon - to your noodles as you're washing/straining them. Then, when you've thoroughly rinsed them, you can set them aside.
  8. Now, in a large stockpot, add the olive oil, and heat it over medium-high heat until it's hot.
  9. Then, add the celery, onions, and carrot to the pot. Sauté for about 8-10 minutes, or until the vegetables soften, and make sure to stir the veggies throughout the process.
  10. Once the vegetables are soft, add the garlic to the pot and sauté it until it becomes fragrant - around 2 to 3 minutes.
  11. Then, when the garlic has become fragrant, add the chicken broth, rinsed shirataki noodles, bay leaves, oregano, thyme, and black pepper.
  12. Bring everything to a boil, and allow the soup to boil for about 5 minutes or until the vegetables are tender to the touch of a fork.
  13. Once the vegetables are tender, add the shredded chicken, and boil for another 2 to 3 minutes - or until the chicken is warm.
  14. Taste the soup and add salt, pepper, and seasonings to taste.
  15. Remove the bay leaves, and serve immediately.
