Hi, TKC members! In special for the ladies... TheKingsCourt > ELV1S' FAVOURITE RECIPES... (1) Do you like to cook? I'm sharing with you all this fantastic Elvis' recipes. Isn't your husband an Elvis' fan? You will make this fantastic recipes and he will love a lot. So... I'm sure He will become an Elvis fan!

I always wanted to try the peanut butter banana sandwiches, I never did, but maybe I will
did someone try them? Are they any good?

I can't answer you because I didn't make it. I found each recipe yesterday. I will try to make some of these recipes...

Soup and Cornbread

Homemade vegetable soup with cornbread was one of Elvis' favorite snacks, according to Mary Jenkins. "He'd have them call and tell me to put on a pot of vegetable soup, because he was on his way home."

1 can whole tomatoes or 2 fresh tomatoes
2 pounds fresh stew meat
1 cup chopped bell pepper
1 cup chopped celery
1 cup chopped onion
5 pieces garlic, finely chopped
2 boxes frozen, mixed vegetables
2 cups diced white potatoes
1 can cream-style corn
1 1/2 cup okra
1/2 cup ketchup
2 tablespoons salt
2 tablespoons black pepper

Cook together meat, onion, celery, bell pepper, garlic and tomatoes for 1 1/2 hours in 4 quarts of water. Add mixed vegetables for hour. Then mix in corn, potatoes, okra, salt and pepper. Cook for 25 minutes longer.

The get-together at Graceland after Elvis' funeral in August 1977 drew 500 people, but Jenkins was afraid that the caterer hadn't made enough to feed them. She stayed home from the funeral procession and prepared a dishpan full of this macaroni and egg salad, the way Elvis liked it:

1-pound package macaroni
1/2 cup sweet pickles
1/2 cup chopped onion
1/2 cup chopped bell peppers
1 dozen boiled eggs, sliced
4 tablespoons sugar
2 cups mayonnaise
1/2 teaspoon paprika
1 teaspoon salt

Boil macaroni for about 15 minutes; remove from the heat and drain. Mix all other ingredients together well. Pour over macaroni. Add sliced boiled eggs and mix well.

For the record, I have eaten many peanut butter and banana sandwiches and they are VERY good...if you fix them right.

Really? Wow. You know they serve them at one of the restaurants across the street from Graceland here in Memphis.

All you have to do is melt about half a stick of butter in a skillet (I use Smart Balance, it tastes just like real butter but has none of the bad stuff that butter has in it), toast two slices of white bread, spread creamy peanut butter on the toasted bread, slice or mash a ripe banana, put it on the bread, then drop the sandwich into the simmering butter, turning it after a few minutes. Make sure all the butter is absorbed by the bread and that the bread is a nice dark color but not burned.

It really is a great sandwich. It is easy to see why Elvis loved them so much. BTW, he always, always ate his peanut butter and banana sandwich with a knife and fork. I don't know why, but that is what I have heard from several different people.

I'm glad I'm not living over there, how would I stay in shape with all the grease

I was hoping someone would have that postcard with the meatloaf recipe on it. I bought it several years ago when I worked at Graceland but I lost it when I moved a couple of years ago.

One of the best meatloaf recipes I have ever tasted. Thanks for posting that.

It is very difficult to stay healthy when you eat those foods. I grew up eating that stuff myself and I am now paying the price. I have Type 2 Diabetes thanks to all that delicious, greasy, fattening food and my overindulgence in it.

According to Dr. Nichopolous, Elvis had Type 2 Diabetes the last few years of his life as well. Of course, I am not sure we can trust anything the good doctor says, so who knows. But Elvis' eating habits certainly contributed to his early demise.
