When it comes to quick and easy weeknight meals, this recipe is always a crowd pleaser! Tender chicken is mixed with broccoli florets, and rich cheddar then folded up into a flakey crescent roll crust to make this dinner one thatis so tasty there will only be crumbs left! You can also cut this dish into smaller pieces to make an appetizer for a party or potluck.

My love affair with Crescent rolls began long, long, ago, and has just deepened through the years. Those flakey layers of dough always bake up perfectly into a soft and tender bread. The real magic happens though, when you start filling up those flakey layers with extra deliciousness. Oh and I have! I have put just about all of my favorite combos into Crescent rolls at some point or another and yet still I can’t find myself ever getting enough.

I mean it is quick, easy, and delicious… what’s not to love?!

For this Chicken Broccoli Cheddar Crescent Ring, I took an extra little short cut that makes it even simpler to make and even more delicious to eat. This little guy started out with a rotisserie chicken! You can either grab one at the store and pull off the meat just to use for this, or if you eat rotisserie chicken as a meal one night, you can use the leftovers in this to make a completely new and tasty dinner the next night.

The ring shape is a classic that is pretty simple to pull off, and looks really nice, but you could also just put the filling in individual rolls for a puff, triangles for a “turnover,” cut pieces of the dough to make this more of an appetizer sized treat, or use the seamless dough to do one long rectangle. Same simple filling but many ways to make it!

Ingredients

All you need for this recipe is a 6 simple ingredients:

  • 2 cups chicken, cooked and chopped – I use rotisserie chicken most often for this recipe. Not only is it super simple and a time saver, but it has incredible flavor to add to the dish! Plus it is always tender which makes it easy to chew for my young kiddos. If you prefer you can use chopped chicken breast, or other leftover chicken. This recipe is perfect for using up whatever you have around.
  • 8 oz frozen broccoli florets, thawed – If you remember take the bag out the day before and throw it in the refrigerator, but if not, then just microwave it until the chill comes off of it and it will work just fine too.
  • 8 oz cream cheese– I prefer Philadelphia brand. You can use regular, like I did here or light, but do not use fat free, as it doesn’t soften and melt the same way and you might not get the best end result.
  • 8 oz sharp cheddar cheese, grated – You can use the pre-grated, or block cheese here. I really like sharp cheese in this dish since there are so many flavors, I think it really helps the cheese to make an impact best, but you could sub it for a colby jack, mexican blend, or other cheddar if it is what you have on hand.
  • 1 tsp garlic powder
  • Salt & pepper– to taste
  • 1 can Big & Flakey Pillsbury Crescent Rolls-I really love these because I feel like it is the perfect amount for a family sized meal and it makes the whole ring easier to build. If you don’t have big and flakey rolls, then you can use regular but you might need 2 cans to get all of the filling in.

Instructions

  1. Preheat the oven to 350˚F
  2. Mix the softened cream cheese, garlic powder, salt and pepper together in a large mixing bowl. Then add the chicken, broccoli, and cheddar cheese and stir until combined. If you didn’t have time to soften the cream cheese, you can put it in the bowl and microwave it for 15-30 seconds, then stir and repeat as needed until it is easily stirred and nice and creamy.
  3. On a greased cookie sheet, lay each crescent triangle down in a circle so that the wide side slightly overlaps to make a circle and the pointed side points out. This may sound a tad tricky when I explain it here but if you watch the video you will see how quick and easy it really is. Also, I mentioned at the top that you could make this same filling several different ways, so if you would rather have a long rectangle you can go that way, if you separate the dough in squares you can make turnovers, if you wrap it in a ball it can be a puff, etc. cut the dough up into smaller pieces for an appetizer sized quick bite. There are really a million ways you can make this dish based on preference and they are all the same delicious end result!
  4. Scoop the mixture evenly around the circle, then pull the points gently over the top of the chicken mixture to secure the ring. If you have questions on how to do this, make sure to watch the video and it will clear it all up. This should be super quick and easy but look really fancy in the end!
  5. Bake for 15-25 minutes, or until the crescent rolls are lightly browned and the cheese is melted.

    Just realized I only have Brussel sprouts!!!! If I cut them in half would that work??? I really want this for supper.

    Tried this the first time tonight to use up some leftover shredded chicken and it was a hit! Even my 3 grandkids liked it! I didn’t have any broccoli, so I used spinach, (which I think made it easier to mix), and I had some bacon in the fridge so I crumbled that and put it in too. It was really good, thanks!
