  1. do you have to use the Inulin???

    Reply

    • Hi Patty,

The inulin acts as the food for the yeast, which makes it rise. I don’t recommend leaving it out.

  2. Can you make this without the inulin?

    Reply

    • Hi Kathy,

I don’t recommend it. The inulin helps the yeast to rise and give that “bready” texture.

  3. Hi Alan,

No, erythritol does not feed the yeast as inulin does. There are no low carb substitutes for inulin.

  4. I don’t really get how to fold it. A drawing could help…

  5. Is the Gum crucial to this receipe? We have just started a keto diet and dont know what the gum is, or what it does. Could you please let me know

    • Hi Jenny,

Yes, it is. Xanthan gum is a gluten-free “gluten” substitute.

  6. Can i substitute natvia for the inulin? And will it work ok without the xantham?

    Reply

    • Hi Monique,

There are no low carb substitutes for the inulin, sweeteners do not act in the same way. I don’t recommend making the bread without the xanthan gum as it provides structure.
      I hope that helps.

This was fantastic. I’m making it a second time already. One point to stress is the fat content of the cheese. I didn’t pay attention to the mozzarella I bought last time, and it didn’t melt well at all. As a result, I ended up kneading the batter with my hands which actually worked quite well, but then the batter was sticky and didn’t roll well.

This time, I’m using whole milk cheese, and everything is going fabulously. I was even able to mix the batter using a fork.

You’re making this keto thing far easier than I thought.
